Super Simple Banana-Apple Pancakes < SANS FLOUR!!!

Banana-Apple pancakes. Kids love them!

Ingredients:

5 large ripe bananas (almost black)

3 eggs

1 tbsp cinnamon

4 tbs of coconut oil or butter

Large skillet

 

Directions:

In a food processor or blender mix mashed bananas, cinnamon and eggs. Blend for about 1 min. Do not over mix.

In a hot skillet add 2 tbs of coconut oil or butter, let it melt  and pour pancake mix. Flip pancakes when the edges start to brown.

This batch makes about 9 small 4 inch pancakes.

Serve hot with homemade applesauce on top. (If you don’t have time to make applesauce you can top them with some fresh cut fruit (apples, peaches, berries.)

Notes:  Add an extra 1/2 cup of  nut butter (walnut, almond, pecan) for more calories. You can also add a 1/2 tsp of vanilla extract for more flavor or 1/2 cup of shredded                     coconut for texture. Play around, be creative!

I highly encourage people with digestive disorders to avoid flours such as coconut or almond.
